Granulated tapioca pudding recipe

Ingredients

  • 500 g granulated tapioca
  • 1 small glass of coconut milk
  • +/- 2 liters of milk
  • 1 cup (tea) sugar
  • 1 can of condensed milk
  • 100 grams grated coconut

Preparation Mode

  1. First, to prepare the granulated tapioca pudding you need to place the tapioca in a bowl.
  2. Then, gradually add the milk and stir constantly to prevent it from sticking to the pan.
  3. When the tapioca is very soft and creamy, add the coconut milk, condensed milk and sugar, mix well.
  4. Place the mixture in a mold with a hole in the center and refrigerate.
  5. After freezing, unmold the tapioca pudding, sprinkle the grated coconut on top and serve chilled.

Tips

  1. If you want the tapioca pudding to be wetter, you can add more condensed milk over the pudding, as if it were syrup.
  2. As it is a versatile recipe, you can use your creativity and serve the pudding with any syrup of your choice. For example, passion fruit syrup.

Difference between tapioca starch and granulated tapioca

In short, tapioca starch is what we usually use in the frying pan, to prepare stuffed tapioca. While granulated tapioca is in the form of irregular and hard tapioca grains.

In fact, it is a byproduct of cassava gum. Well, it is produced through a process where the gum is heated in a hot pan until it forms hard granules.
