This salad is made with brown rice. The rice I use is a mix of whole grains (not just rice). There is the brand Ráris and Tio João. Both are good. I’m using Tio João (7 cereals + soy).
I started by cutting 1/2 cup of grape tomatoes in half, added 4 chopped black olives (those huge ones), 1 teaspoon of capers (I used the very small ones), 5 large chopped basil leaves, 1 pinch of oregano, 1 tablespoon (coffee) balsamic, 3 tablespoons olive oil, salt and black pepper. I left it marinating.
Meanwhile, I prepared 1 cup of rice (7 cereals + soy) according to the instructions on the package. I let it cool and added it to the marinade.
I grilled some strips of pork filet mignon, which were previously seasoned, then it was just a matter of assembling: I took a large leaf of American lettuce, placed the rice mixture with the marinade in the center and on top of it the strips of mignon.

Important detail: the tomatoes and basil are from my garden (all planted in pots and planters).
