Gourmet Lemon Brigadeiro

I’ve been owing posts about gourmet brigadeiros for a long time and it’s finally out. This week I’m going to share some recipes here at Panelaterapia, keep an eye out. And to start, let’s go with the lemon brigadeiro, which is divine!
Firstly, it is necessary to clarify that the term “gourmet” in brigadeiro refers to the use of noble ingredients, therefore, if you want to make gourmet brigadeiro you will have to spend a little more.Even though the brigadeiro is a children’s recipe, in the sense that it is one of the first recipes we learn, believe me, there are many people who have difficulty preparing it (right, Flávia?), getting it right, etc. So, if you are one of these people, I suggest you first learn the traditional one (the one we even use chocolate milk), become an expert and then move on to the gourmet version, so you don’t run the risk of ruining expensive ingredients.

Let’s get to the recipe, which yields around 40 to 50 brigadeiros, depending on the size.

  • 1 can of condensed milk;
  • 1 egg yolk (without the skin);
  • 3 spoons of white chocolate chips or shavings;
  • 50 ml of lemon juice (from 2 to 3 lemons);
  • About 100g of chocolate shavings (for rolling).

Mix the condensed milk with the egg yolk and chocolate drops, cook over low heat, stirring constantly until it boils. Add the lemon juice. After it starts to boil and bubble, stir for another 6 minutes.
Because the dough contains chocolate, it won’t be very firm when hot, but once cold it hardens well. Keep in the fridge for 4 hours until curled.

Important Tips:

– To roll, rub cold water on your hands instead of butter and then coat in chocolate shavings.
– Instead of sprinkles, I used white chocolate shavings from Callebaut, a Belgian brand (look online, they’re available in online stores). The drops are also from this brand.
– Make very small balls because they increase a lot when they are added to the chocolate shavings.
– If you don’t want to use white chocolate in the brigadeiro dough, replace it with 1 tablespoon of unsalted butter.
Swap the lemon juice for passion fruit pulp juice to vary the flavor.
