Golden Sweet Potato with Garlic

Anyone who has been following me here on the blog for a while will have already read posts with Luzia’s recipes. She has worked at my parents’ house since I was a child and makes a lot of delicious food! The credit for this sweet potato goes to my mother, who taught Lu. Guys, it looks really wonderful! Try it!

It’s very easy, but you need to be patient.
Start by peeling the sweet potatoes and cutting them into tall slices (here were 2 medium potatoes).
Now chop about 3 to 4 cloves of garlic (yes, that’s a lot of garlic).
Spread a thin layer of oil in a frying pan and fry the garlic over low heat. Before it browns, place the potatoes on top of the garlic and keep it on low heat.
Every now and then you turn a potato over to see if it has browned underneath. When it’s golden, turn them all over to brown on the other side.

Now the secret to making them cook. After you’ve turned the potatoes, add water little by little, like half a cup of coffee at a time and cover the pan until the water dries, then you add more, and do this as many times as necessary until you pierce the potatoes with a fork. be soft. Then just add salt and serve. Seriously, these sweet potatoes are perfect! Caramelized, tasty and with a crunchy crust!
