Here in Sorocaba Filet Parmigiana is almost a typical dish. People really like it! I like it, but I’m not in love with it, my husband has real passion!
It’s a simple recipe, but let’s face it, breading and frying are boring things to do. It’s that basic scheme (photo) that you may already know: filet mignon seasoned your way, dipped in wheat flour, beaten egg, breadcrumbs and fried in hot oil.

After that, you make a thick tomato sauce, place the fillets in a refractory dish, cover with mozzarella cheese, spread a generous layer of the sauce and bake for 10 minutes before serving. You know that fries cannot be missing as an accompaniment. and the “parmigiana law“!
