Monday-holiday calls for lazy and light food. A great meat-free option! Delicious! I was surprised by the result of this dish, much tastier than I imagined!
Red sauce: I sautéed 1/2 onion in olive oil, added 1 can of peeled tomatoes, 1/4 of tomato sauce, basil leaves, salt and black pepper (freshly ground).
For the meatballs: 1 small ricotta (I always buy very moist), 2 tablespoons of grated parmesan, 2 tablespoons of olive oil, 2 tablespoons of cream (or cream cheese), salt, pepper (I used white) and oregano to taste. Mix everything and make balls. The balls can be dipped in grated parmesan or a mix of herbs.
I cooked 1/2 package of farfalle, covered it with the sauce and placed the ricotta meatballs on top. I sprinkled dehydrated parsley (the Chinatown brand is very green!) just to make it fresh. Quick, light and really good!!!
