  • 2 cups of milk
  • 2 tablets of fresh yeast
  • 4 tablespoons of sugar
  • 1 ovo
  • 1 tablespoon of salt
  • 1 cup vegetable oil
  • 860 grams of wheat flour, or more if the dough is very wet

  1. First, let’s make the esfiha filling. Then, peel and chop the onion, tomatoes and green chillies, finely chopped.
  2. Then, mix it with the ground meat and add a little olive oil so it doesn’t get dry.
  3. Bring to the boil and sauté briefly, as the intention is to finish cooking in the oven.
  4. Next, let’s move on to the dough. Therefore, warm the milk a little.
  5. Meanwhile, mix the yeast with the sugar.
  6. Add the milk, egg, salt and oil and mix well.
  7. Add the wheat flour little by little while kneading the dough, until it is fluffy and no longer sticks to your hands.

  9. After the dough has rested, roll out each of the dough balls until they are thin.

  12. Finally, place in the preheated oven at 180°C to bake for about 30 minutes or until you notice that they are already golden.
