When I saw Ana Maria Braga making this recipe I didn’t have much faith, but my coworkers, I confess that I broke my face! The cupcake is not only delicious but is much simpler to make than the traditional recipe that uses chocolate bars. Come here:
Ingredients (for 8 units – I made half the recipe):
– 100g of sugar
– 110g powdered milk
– 120g chocolate powder (I used Dois Frades from Nestlé)
– 4 eggs
Just mix everything. The ideal is to sift the dry ingredients to avoid lumps.
Grease the molds with unsalted butter or margarine and sprinkle with chocolate powder. It is important that the entire mold is well covered with butter and chocolate, as in the photo below. Petit gateau molds are deeper than pie molds, I have already tried to make them with these (pie molds), but, as they are shallow, the middle of the mold The cupcake is not as creamy as it should be.
Divide the dough into the molds without filling it to the top, as it will grow in the oven and may spill out.
Bake in a preheated oven at 200º for 11 minutes. I strictly followed this time and temperature guideline and it worked really well. They come out of the oven looking beautiful like this:
Wait 5 minutes to unmold them. It gives the impression that they won’t come out of the mold because they are a little soft, but with a small knife and a little care you can remove them without much difficulty.
If you don’t have petit gateau molds, make them in ramekins or small refractory dishes that can go in the oven and serve as a soufflé, it will be a success just the same. Serve with ice cream which is VERY good!!! Let me know what you think later, okay?
