Banana Muffins:
-1 1/2 cups flour
-1/2 sugar
-1 tsp baking powder
-1 tsp baking soda
-1/2 tsp salt
-1 egg
-3/4 cup mashed banana
-1/3 cup melted butter
-1/3 cup brown sugar
-1 TBL flour
-1 TBL melted butter
-1/4 tsp cinnamon
INSTRUCTIONS:
Combine dry ingredients. Beat egg, banana and butter, stir into dry ingredients. Spoon into muffin tins lined with muffin papers. Combine brown sugar, 1TBL flour, 1 TBL butter & cinnamon and sprinkle on top. Bake at 375F for 20mins or till done.

Taco Seasoning Mix:

Chicken Marinade:
-1 cup water
-1 cup white vinegar
-2/3 avocado oil
-4 garlic cloves minced
-2 TBL Salt
-2 tsp your choice of seasoning
-1 tsp black pepper
-1/2 cup honey

So I made your banana muffins with canned pumpkin (I had about a cup’s worth in my fridge that I didn’t know what to do with), added a little bit of ground ginger, nutmeg, cloves, and allspice to the batter, and they turned out amazing! (I ended up having to cook them for about 30 minutes but I think that was due to the wetness of the pumpkin) I can see why your kiddos loved them 🙂

  6. I come from a sugar producing nation and i can tell you that in fact "true, real brown sugar" is simply sugar that has not been refined. Molasses is a by-product of the sugar cane, i know i have seen the process when i was a child. Personally, i wouldn't call refined sugar mixed in with molasses a true brown sugar. As a kid i remember at some point, the only sugar we were being allowed to buy was the brown sugar which the nationals saw as an insult because the government decided it so as they were supposedly exporting the refined sugar….

  7. My banana pastries never come out this big and fluffy no matter what I do! Especially the banana bread/cake, it rises beautifully in the oven and then the minute I take it out it deflates like a year old baloon. I noticed you put more flour than I do though, so maybe I need to "overpower" the banana with the flour to really get that rising effect. Thank you so much for sharing!

  10. Thank you for all the tips! I’m going to try some of them and share on my budget friendly channel too. I LOVE your tips for chicken marinade and I’ve never seen Alfredo made like that before! Does it harden up in the fridge or is it still liquid when you go to pour it?

    Maybe I’ll finally get around to canning for the first time too 😅 You definitely make it look so easy! Where did you get that large pot? That’s the only thing I’m missing.
