Inexpensive, delicious, easy veggie spring rolls!

FULL RECIPE in 5-minute video on Youtube –

Ready in an hour or less (20 minutes to make, ~40 minutes to chill in the fridge)

– Rice paper wraps
– Rice noodles, vermicelli (thin) style
– English cucumber
– Carrots
– Avocado
– Scallions
– Cilantro

Simple dipping sauce
– Tamari (soy sauce)
– Oyster mushroom sauce
– Scallions

Directions – spring rolls
– soak rice paper in cool water until soft
– soak vermicelli noodles in warm water until ready
– dice scallions, chop cilantro
– cut veggies and make wraps as in video
– put in the fridge and make your sauce

Directions – dipping sauce
– pour about equal amounts of each sauce into a bowl
– add cilantro, chopped scallions, and stir
