New hotel in Brickell
With an investment of USD 1.05 billion, the hotel has 352 rooms, eight suites and 89 residential apartments – all owned and operated by Swire Hotels, a Hong Kong brand, for the first time in USA. Sizes range from 30 to 170 m² and have a balcony overlooking Biscayne Bay.

The new hotel in Brickell has two restaurants that promise to give something to talk about and I already tried to visit one of them on my last trip to Miami. I’m referring to La Huella, the first branch of the Uruguayan seaside restaurant Parador La Huella, which is currently in 11th place on the list of 50 Best Restaurants in Latin America of 2015.

La Huella Restaurant
As I already knew the original, on Jose Ignacio beach, I was very curious to see the one by Miami. The project, by Los Angeles-based design firm Studio Collective, is impressive right away. There are 900 m2 of space, with 359 seats throughout the restaurant and varied environments, indoor and outdoor.
It has unique cooking and fire methods with a grill in the center of the kitchen, wood-burning ovens stocked with local red and white oak, a sushi counter highlighting the Florida coast, and a large area next to the pool, super romantic and where it is possible to dine outside, whenever temperature permitting.
The restaurant, which is open for breakfast, lunch, dinner and evening snacks – for guests and non-guests – is run by a first-class team: Nano Crespo, Executive Chef at Quinto La Huella; Alejandro Morales, Executive Chef at Parador La Huella; and Florencia Courreges, Executive Pastry Chef at Parador La Huella.
I thought the place was incredible, very tasteful and very lively. In closed environments, the noise was a bit disturbing, but as it’s new, let’s hope they improve the acoustics.

La Huella’s cuisine
I tried the sashimi, which was very tasty, the octopus carpaccio, light and thin, and the black rice with shrimp, a dish I love! For dessert, I had to try the little cake of Uruguayan dulce de leche, which made me sigh a lot.
In addition to The footprint, EAST Miami features Sugar, the Asian-inspired bar and garden on the 40th floor that serves tapas and a variety of drinks, and Domain, a café and bar in the lobby that serves light meals, as well as wines and other beverages.
Now, I just wanted to get to know the hotel more deeply and try out the concept. lifestyle (such as eco-friendly amenities, including keyless entry to the room and paperless check-in or check-out) that has been successful in other metropolises.
