I buy these skinless thighs already boned and seasoned, but you can make them with chicken fillet or any parts of the bird you prefer.
Just put the chicken pieces in a frying pan with a little olive oil, when they are browned on one side, turn them over and add a handful of sliced shiitake mushrooms. Season the mushrooms in the pan with salt, pepper and a little soy sauce (shoyu). When serving, just place the shitakes on top of the chicken. A leafy salad and nothing else!
PS For those who don’t know how to prepare shitake, just wash it, remove the stem and use it however you want (whole, sliced, chopped…).
