Snacks

For mass:

  • 3 cups of wheat flour (420 grams)
  • 3 cups of milk (720 milliliters)
  • 2 tablespoons of butter
  • 1 tablet of chicken broth
  • 1 teaspoon of salt

For the filling:

  • 500 grams of cooked and shredded chicken breast
  • 2 ripe tomatoes, chopped
  • 1 chopped onion
  • 3 tablespoons chopped green chilli
  • 4 tablespoons of cream cheese
  • 1 tablespoon olive oil
  • Black pepper

To bread and fry:

  • ½ cup of milk (120 milliliters)
  • 1 cup breadcrumbs
  • frying oil

How to make:

  • Start by preparing the simple coxinha dough: first heat a pan with the milk, butter and stock tablet.
  • When it starts to boil, lower the heat and add the salt and wheat flour all at once. Stir immediately with a wooden spoon, mixing and kneading well until the drumstick dough starts to come away from the bottom of the pan, as in the photo.
  • Transfer the drumstick dough to a clean countertop sprinkled with flour and set aside until warm. Then knead and knead the simple drumstick dough with your hands until it is smooth and homogeneous. The dough is ready! Let's prepare the chicken and cream cheese filling.
  • Heat a pan with the olive oil, chopped onion and tomatoes over low heat. Season with salt and pepper to taste and let cook, stirring occasionally, for 5 minutes or until these ingredients are soft.
  • Then add the cooked and shredded chicken and the green chilli. Mix and let it cook for another 1-2 minutes, so the chicken gets the taste of these seasonings. Turn off the heat and let it cool a little before mixing the cream cheese into this simple coxinha filling.
  • Tip: to make the chicken filling redder, add 1 teaspoon of paprika and mix very well.
  • Take a piece of the drumstick dough and roll it into a disc shape in your hand. Add a portion of the chicken filling and close the dough, shaping it into the shape of a traditional coxinha. Repeat with the remaining dough and filling.
  • Tip: the drumstick dough disc should be more or less the same size as the palm of your hand.
  • Coat the drumsticks in milk and then coat in breadcrumbs. Heat the oil in a pan over medium heat and, when it is hot, add 3-4 drumsticks and fry until they are golden on all sides.
  • Tip: to check if the oil is at the right temperature, sprinkle a little breadcrumbs in it: if the flour starts to fry immediately, you can add the drumsticks to fry.
  • Remove the fried drumsticks to a plate lined with absorbent paper and set aside. Continue frying the remaining drumsticks, just 3-4 at a time, to prevent them from sticking together and to prevent them from becoming greasy.
