Double Chocolate Crown Pie

Oh, what a beautiful dessert for you.”ahazar” on the weekend! It seems very elaborate but I guarantee you will be able to do it:

Massa:

200g of cornstarch biscuits crushed in a blender or processor;

70g chopped unsalted butter.

Mix well until it forms a moist crumb and line the bottom of the pan, pressing with the palm of your hand to make it very compact. Arrange the cookies of your choice around the pan. I used white chocolate “tart” cookies.

White chocolate filling:

Chop 250g of white chocolate into pieces. Heat 300ml of cream (1 box and 1/2) in the microwave. Keep it very hot, but don’t let it boil. Add the chopped chocolate and stir well until it melts completely.

Add 1 tablespoon of colorless gelatin powder to 4 tablespoons of water, wait 2 minutes to hydrate and place in the microwave for 15 seconds to melt. Add to the white chocolate cream and mix well. Pour the cream over the dough and refrigerate for 1 hour to set.

Dark chocolate frosting:

Heat 100ml (1/2 box) of cream and add 1 bar of chopped semi-sweet chocolate (180g). When completely melted and at room temperature, pour over the pie. Place in the fridge and after 1 hour it is ready to be decorated. Suggestion: white chocolate shavings.
