Delicious Pizza Dough

“Everyone expects something from a Saturday night”… In my case, I expect at most a beer with friends, a pizza… and let’s agree that Saturday and pizza were made for each other, so I leave here this recipe that was super approved at home! And I had already tested several doughs, but none of them pleased me like this one! You can test it and it will be successful!


For the dough (cup of cream cheese as a measure):
2 glasses of flour;
1 tablespoon (flat) of salt;
1 tablespoon of instant yeast (the granulated one);
1 teaspoon of pizza flour improver (optional);
4 tablespoons of olive oil;
1 glass of warm milk.

Place the flour in a large container (I used 1 cup of white flour and 1 whole wheat flour). Add the salt, yeast, flour improver and olive oil. Heat 1 glass of milk (it should be warm and not TOO hot), gradually pour it on top of the other ingredients and knead with your hands until it forms a uniform dough.

You may not use all the milk, but you may also need a little more. Feel the dough and evaluate. I used less than 1 cup. Let the dough rest for 30 minutes, during this period heat the oven to high temperature.

Home ovens don’t reach the temperature of wood-fired ovens, so the pizza at home doesn’t turn out the same as the one from the pizzeria. To reduce this difference, the tip is to heat the oven for a long time at a high temperature and bake the pizza in as short a time as possible.

After the resting time, roll out the dough onto a pizza pan lightly greased with olive oil. You don’t need a rolling pin to roll it out, the dough is super malleable, place it on the pan and adjust it with your hands. Bake the dough in a high oven for 8 minutes. Remove from the oven, add the topping and return to the oven just to melt the cheese (another 10 minutes).

For the topping I used a thin layer of tomato sauce, several cheeses that I had: mozzarella and light dish, cream cheese and Grana cheese (which is equivalent to parmesan and is spectacular). On top I added fresh tomatoes, basil, oregano and olive oil. It was delicious! Very similar to those at a pizzeria. Makes a huge pizza!
