1 onion 🧅
1 cup quinoa rinsed
1 can red or black beans 🫘 washed
1 can corn 🌽
2 medium tomatoes 🍅
1 cup vegetable broth
1 tsp mexican spices

Cook first the onion for 1 minute on a medium heat with olive oil reduce the heat then add all other ingredients stir cover leave it cook 20 minutes
