Crispy Vegetables on a Bed of Herbs

To detox from the food orgy of recent days, only many vegetables, greens, berries and water (the kind that birds don’t drink isn’t worth it, huh?). Bring salted water to boil, add the cut potatoes and carrots in the desired quantity and after three minutes add the green beans (because they cook faster). Leave another 3 minutes.

Drain the vegetables and set aside. In a refractory or baking dish, make a “path” of herbs. Drizzle the container with plenty of olive oil, sprinkle with salt and pepper, sprinkle with fresh or dried herbs of your choice (I used basil, sage, rosemary and oregano) and spread with a few cubes of butter. Add the potato and carrot, mixing lightly to incorporate the seasonings. Place in the oven. When it’s almost ready, add the pods and leave for another 5 or 10 minutes.
