Creamy Cassava Cake

Cassava, Macaxeira or Cassava? Tell me what your name is and I’ll tell you where you are!  Jeez Brasilzão, right people? So big that not even our Portuguese language is one! But I guarantee that from north to south everyone will love this delicious cake!

Ingredients:
100g grated coconut
1 cup of milk (tea)
1 glass of coconut milk (200ml)
100g unsalted butter at room temperature
2 cups of sugar (tea)
2 eggs
600g grated cassava
1 pinch of salt
Butter for greasing

Place the coconut in a bowl, pour over the milk and coconut milk and let it hydrate for 10 minutes. Add the butter, sugar and eggs and beat until a homogeneous mixture is formed. Add the cassava and a pinch of salt and mix well. Transfer to a greased medium pan and bake in a preheated medium oven for 50 minutes or until set. Remove, let cool and serve.
