Corn Soup with Potatoes

This soup is not only delicious, it’s a super quick recipe because it uses ingredients that we always have at home and it’s quick to prepare!

Quantity for 2 well-served portions:

  • 2 tablespoons of olive oil
  • 1/2 chopped onion
  • 1 can of green corn (without the water)
  • 2 medium potatoes cut into cubes
  • 2 cloves of garlic, chopped
  • 800ml chicken or vegetable broth (can be homemade or 1 tablet dissolved in water)
  • 2 tablespoons of cream
  • 1 slice of pepperoni, chopped

Sauté the onion and garlic in olive oil, add the corn and potatoes, mix well. Cover with the broth and cook until the potatoes are very soft, add the cream. Beat with a mixer or place in a blender. Taste the salt, add a pinch if necessary, but don’t forget that the pepperoni is very salty.

Heat the chopped pepperoni in a non-stick frying pan and sauté in the fat. When serving, place it over the soup.

* Bacon instead of pepperoni also works well.
