Opened in March 2017, Cór Gastronomia was created by restauranteur Alexandre Mora with a menu created by Renzo Garibaldi, after the Peruvian chef held a pop up kitchen in the old Batubara, where Cór is today. The restaurant’s internal environment is spacious, has a vibe industrial and an open kitchen with a barbecue facing the lounge, where all the dishes come from, prepared with fresh, organic and artisanal ingredients.

The cozy balcony is also an invitation for lunch or dinner on days with milder temperatures. Furthermore, indoors there is also a large wine cellar and a drinks bar.

From the barbecue, not only the noble meats come out, but also the majority of the menu, such as fish, vegetables, roasts and even the butter is smoked. For starters, our suggestions are burrata with arugula pesto, olives, tomato confit and toasted bread, and aged angus fillet tartar and sweet potato chips.

The highlight of Cór is its dry-aged meats, through a process known as “dry-aged”. Applied to the bone, the method guarantees the concentration of flavor, the breakdown of fibers and the quality of tenderness. In some cuts, for example, the maturation process is extended for more than 60 days to achieve more complex flavors and unique texture.
