Concentrated Vegetable Broth

If you want to take a break from industrialized broths and make your own vegetable broth (which is much tastier and healthier) just bring a large pan to the boil with three liters of water and the following roughly chopped ingredients:

– 1 onion (I used the purple one which makes the broth darker)
– 1 carrot
– 2 celery stalks and branches
– 3 bay leaves
– 3 cloves of garlic (I put it peeled)
– A few peppercorns
– A handful of parsley or herbs of your choice.

To make normal broth, just boil for 1 hour over low heat and strain. It will yield about 1 liter of broth that can be frozen for future use.


To make a concentrated broth like the one in the photo, just boil it for about 2 hours. It will yield around 300ml of broth (very little, I know, but if it’s for a special dish it’s worth it). The concentrate has a more intense flavor.
Homemade broth can be used as a base for soups, sauces, risottos, etc.
