The suggestion is very simple: coconut rice. Your ready-made rice adding a nice coconut taste, how about that?
This time, I used coconut milk powder (read more: Coconut Milk Powder). I thought I had some dried coconut in the fridge, but when I looked, I only found coconut milk.
In fact, I would use both. O seco would give another texture to the rice, while the leite more flavour. In the end, it tasted just the same.
Due to the inherent fat in the coconut, the rice becomes creamier, that’s how it is. That is, a beauty.
Coconut rice
Makes: 2 portions
- 200 g White rice (pronto)
- 100 mL water
- 25 g coconut milk powder
- fresh parsley (August)
- refined salt (August)
- ground black pepper (August)
1 cup: 250mL | 1 tablespoon: 15mL.
- In a pan add water and let it heat up. Then, add the coconut milk powder.
- Add the cooked rice and lower the heat to low. Wait for the water to dry almost completely.
- Adjust the seasonings.
- At the end, add the parsley.
