Coconut Ice Cream Pudding

This pudding, or flan, is very easy to make! Don’t even go to fire! And the best thing is that you can vary the flavor by changing the syrup! As the base is very neutral, it goes with everything! Here I used a ready-made chocolate syrup, but you can use soft brigadeiro syrup, fruit jelly, guava melted over the fire with a little water to soften it, in short, it’s very versatile!

Ingredients:
300 ml of coconut milk;
1 can of condensed milk;
1 can of cream;
1 envelope of colorless gelatin;
Copra Coconut Oil or other vegetable oil to grease the mold;
Syrup of your choice.

Way of doing:
Prepare the gelatin as suggested on the package.
Mix the coconut milk, cream, condensed milk and gelatin. You can blend it in a blender or mix it with a wire whisk. Place in greased pan and refrigerate for 3 hours. Unmold and add the syrup.
