1 – Ganache
To surprise you right away, Ganache is such a simple topping that you don’t even need to go through step-by-step instructions. Firstly, it only consists of a chocolate bar and cream.
So, you basically have two options: the first is to put the ingredients together in the microwave until they melt, then take them out and stir. The second, in fact, is to mix the two until the chocolate bar melts on the stove, in a bain-marie.
The only thing you can’t forget are the measurements:
- For every 200g of dark chocolate use 100ml of cream;
- For every 200g of milk chocolate use 70ml of cream;
- for every 200g of white chocolate use 50ml of cream.
2 – Sugary
Firstly, the sugary chocolate icing, which usually goes on top of citrus cakes, touches many people’s hearts. So, to make it at home, you will need:
- Cup of impalpable sugar;
- 1 spoon of cocoa powder;
- 3 spoons of milk
First, mix a cup of powdered sugar, a spoon of cocoa powder and about 3 spoons of milk. In other words, mix all the ingredients until you form a soft paste.
Finally, pour it over the cake, as the icing will be consistent and shiny.
3 – Brigadeiro topping
The brigadeiro chocolate topping is the most classic, and perhaps, the most loved of all. For her you will need:
- 1 can of condensed milk;
- 1 tablespoons of unsalted butter;
- 2 tablespoons of cream (to make it softer, optional);
- 1/3 cup of cocoa powder;
- granulated chocolate August.
Here you will need to mix the butter, condensed milk and chocolate over a hot heat, stirring constantly. When it boils, lower the heat and let it cook, still stirring until it forms a consistent cream and starts to come away from the bottom of the pan.

4 – Hard chocolate coating
Ideal for carrot cake, the hard icing also has its value. To explore it, then, you will need:
- 8 level tablespoons of Nescau;
- 8 level tablespoons of sugar;
- 2 tablespoons of unsalted butter;
- 4 tablespoons of milk.
First, mix all the ingredients, place over low heat and stir constantly. Soon after, when the syrup starts to bubble and later releases from the bottom, turn off the heat.
Then, once it’s ready, spread it over the cake immediately. This will determine how hard it will be and the amount of sugar.
5 – Soft chocolate coating
There are those who prefer a softer chocolate icing, which penetrates the cake and leaves it soft and tasty. So, if you are this person, you will need:
- 4 spoons of any chocolate milk;
- 2 spoons of sugar;
- 4 spoons of milk;
- 2 tablespoons of unsalted butter;
- How to make the soft chocolate frosting.
First, add all the ingredients over medium (or low) heat, stirring constantly until they dissolve well, thicken and the bottom of the pan starts to appear. Then, poke holes in the cake with a toothpick and drizzle with the still hot chocolate icing.
6 – Covering with condensed milk
Finally, how about the chocolate topping with condensed milk? You will need:
- 1 can of condensed milk;
- 3 spoons of chocolate;
- 1 spoon of unsalted margarine;
- 1/2 can of milk.
As simple as the first topping on this list, first just combine all the ingredients over medium heat, stirring constantly until it thickens. Then, when ready, spread the icing over the still hot cake.
