Chicken and Dressing Casserole:
1 whole chicken or chicken parts (approximately 3 lbs)
1 onion
1- 4 celery stalks
2 1/4 cups of chicken broth, divided
1 can Cream of Mushroom soup
1 can Cream of Chicken soup
1 stick of unsalted butter
12 oz bag Pepperidge Farm Herbed Stuffing Mix (you’ll only use 6 oz). Stove Top Stuffing not recommended.
INSTRUCTIONS
Boil chicken with chopped and peeled onion and celery stalks; reserve broth. Chop chicken into bite size pieces and place in 9×13 casserole pan. Combine soups and 1 ¼ cups broth. Pour over chicken.
Mix 1 stick of melted butter, 1 cup of broth, and stuffing mix. Spoon over chicken. Bake at 350 for 1 hour covered with foil. Remove foil and bake for an additional 15 minutes.

***Save time by using a pre-cooked rotisserie chicken and canned chicken broth.

  2. Hi, Andrea! This recipe is very similar to the one I did early this year–remember? Great minds think alike, I guess, haha!
    I agree: with the canned soup, no need to add extra salt.
    By using premade stuffing mix, no need to add extra seasonings.
    Wow, that turned out great. So glad to hear it tastes just like it did when your mom made it. Thanks for sharing!

  3. I don't think we've tried this before but it sounds amazing. We have that same cream of chicken. Nabol is already liking this recipe because it has no bones. Haha Oh my goodness, looks so so comforting. We'll need to try this. 🙂
