Cheese Bruschettas with Marinated Tomatoes

Some things are as delicious as they are simple and that’s a proportion I love!

To reproduce this recipe you need firm bread (I’m using a rustic ciabatta, but it can be any bread you prefer, it may even be stale and hard).

I prepared the tomato 2 hours before (the longer it marinates the better) as follows:

I cut a large, firm tomato in half, removed the seeds and chopped it into small cubes. I added fleur de sel, black pepper, 1 crushed clove of garlic (small), 1 tablespoon of balsamic, 1 tablespoon of dried oregano, mixed well and covered with olive oil. I kept it in the fridge.

For Bruschettas:

I cut a clove of garlic in half and rubbed it on a baking tray, then greased it with plenty of olive oil. Some people rub garlic on slices of bread, but I prefer the milder flavor.

I sliced ​​the bread (not very thin) and placed it in the pan, on top I spread a thin layer of cream cheese (this prevents the bread from becoming soft), mozzarella cheese, tomatoes, drizzled with the liquid left over from the marinade and put it in the hot oven (220º) until the cheese melts. I took it out of the oven and sprinkled with fresh thyme (it could have been basil, but I pruned my plant and it is recovering).

So simple and so delicious! Just use good quality ingredients.
