You know how it is, when the subject revolves around food I’m very suggestible! I’ve wanted a waffle maker for ages and when I saw the cheese bread like that… it made me stronger, tive what to buy. Here we are.
For variety, I made some changes. In the original recipe of Paula It only called for cassava starch (sweet cassava starch), however, as I also had sour starch, I decided to add some too. The texture will change, of course. I liked the result! Okay, I haven’t tried Paula’s version, but it’s definitely good! In Miss P, we trust!
It was crispy/toasted on the outside and soft on the inside. Bãodimais! Really cool idea to make for an afternoon snack with ozamigos or with the children. It combines the best of both worlds: the speed of a waffle and the characteristic taste of cheese bread.
I made half the recipe and the yield was 10 units, but I still had a lot left! I spread it on a baking tray and put it in the freezer until it was very hard and then stored it in a plastic bag. To heat/defrost I use the toaster, it worked great!

Cheese Bread Waffle: Crispy and Lots of Cheese
Makes: 10 units
- 150 g cassava starch (sweet powder)
- 100 g sour tapioca
- 250 mL leite integral (you can use any type)
- 100 g butter without salt
- 1 ovo (grande)
- 100 g grated cheese (colonial and/or parmesan)
- 3 g refined salt (about 1/2 teaspoon)
1 cup: 250mL | 1 tablespoon: 15mL.
- Mix the sprinkles and season with a little salt.
- In a pan, boil milk and butter.
- Add the tapioca mixture and mix well. Knead with your hands or with a planetary mixer for 3-5 minutes.
- Add the egg and mix well. It takes a while to be absorbed.
- Add the grated cheese and mix well to combine.
- Divide the dough into balls, it remains uniform and thick.
- Turn on the waffle maker according to the manufacturer’s recommendations if you wish to grease it with butter.
- Place a ball on each of the machine’s plates, close and let it cook for around 4-5 minutes, it will depend on how toasty you want it. Serve immediately.
- Bake at 180ºC for around 25-30 minutes, it will be lightly golden on top. Do the toothpick test.
- Remove from the oven and let cool for 10 minutes before removing the ring from the pan. Leave to cool completely before continuing.
- Waffle machine: It is worth mentioning that the equipment was not designed for this, that is, it could shorten its useful life and/or damage it. Be warned! – Milk: I used it with a low lactose content (-90%) due to my lactose intolerance. You can use normal milk without any problems.
