Since I posted the “recipe” of cheese bread I received several recipes from my dear colleagues. I’m sure they’re all very good, but I chose Ludmilla Amaral’s because it’s prepared in a bread maker.

Ludmilla: I modified the “modus operandi” but the recipe is the same, ok?

I put it in the container that came with the machine. (you can knead with your hands, just follow the recipe the same way):
– 100ml of milk
– 100ml of oil
– 2 eggs
– 2 medium potatoes, boiled and mashed
– 1 cup of grated cheese (I used half cured and a little parmesan from a bag)
– 1 tablespoon of salt (try the raw dough and adjust the salt according to your taste).

In another container, place 500g of sour starch (I used 300 of sour and 200 of sweet) and moisten with 100ml of water at room temperature. It will form some lumps (lumps), at this point, knead it with your hands until it breaks down and forms a uniform “crumb” that you must add to the other ingredients in the machine. Using a spoon, mix a little. Turn the machine on to the “knead” cycle.

Once the dough is ready, just make balls and bake. As it makes about 50 small cheese breads and 6 larger ones that I made to try (the one in the first photo) I froze them in portions. To freeze, place the balls on a baking tray and place in the freezer, once frozen, just pack them.

It was a good scandal! I loved!
