Ingredients:
  • 1 and 1/3 cup yellow cornmeal
  • 1 and 2/3 cup of wheat flour
  • 3 eggs
  • 1/2 cup canola, sunflower or corn oil
  • 1 and 1/2 cup sugar
  • 1 generous pinch of salt
  • 1 cup of milk
  • 1 tablespoon of baking powder
  • 1 cup diced guava paste, plus a little to finish
Preparation mode:
  1. Firstly, you need to beat the eggs with the sugar by hand, or with a mixer, until well mixed.
  2. Then, you can add the oil and beat together with the others for a while longer.
  3. Therefore, add the flour and cornmeal interspersed with the milk. Also, remember to mix well and also add the yeast.
  4. Anyway, now you can add the guava paste in wheat flour. It’s worth noting that you should mix a little so that the flour doesn’t come loose.
  5. Then, pour the dough into a greased and floured pan. In fact, at this point, if you want, you can add a few more guava cubes on top of the dough.
  6. Bake in a preheated oven at 180-200˚C until golden, for approximately 50 minutes. If you want to see if the cake is well baked, we recommend that you do the toothpick test to be sure.

It’s worth noting that you need to dip the guava cubes in wheat flour. This way, they will stay very loose. In fact, this can even help prevent them from sinking to the bottom of the pan when baking.
