I bought a huge portion of organic carrots and most of them turned into a delicious and very creamy soup! This is one of those super practical recipes that even children can eat (with the necessary adjustments in terms of salt, seasoning, and the like, depending of course on the age group). Let’s do this?
Ingredients:
2 col. olive oil (soup)
1 large onion finely sliced
500g carrot pieces
1/2 cabbage (chá) of salt
500ml vegetable broth
1 col. curry or saffron (tea)
1 box of cream (200g)

Sauté the onion in olive oil over low heat until it browns well, it needs to caramelize, it takes around 15 minutes. Add the carrot, salt and vegetable broth, cover the pan and let it cook until the carrot is soft. Blend everything in a blender or use a mixer. Add the curry and cream. Mix well and serve warm.
