To celebrate the International Women’s Day next March 8th, the Terrace Italy will offer all women a delicious treat alongside the best part of the meal, dessert. This is the Cantucci with Vin Santo, a delicious biscuit with almonds that, when dipped in this delicious and traditional dessert wine, becomes even better.

But behind a great recipe there is always a great woman. And in the case of Terraço Itália’s cantucci, it couldn’t be any different. Anyone who thinks that chef Pasquale Mancini is responsible for this delicacy is mistaken. The author is Beth Vasconcellos, his wife and faithful companion in the kitchen and in life.

Beth began to appreciate and enjoy cooking only when she moved to Italy, where she met Pasquale in the 90s. The Brazilian began her journey in Tuscany working in a charming restaurant at the Hotel La Chiusa, where on busy days she helped the confectionery team and thus became a specialist in sweets. Proof of this is the Gelato Artesanale served at Terraço Italia – prepared by her – and which is a huge success.

The restaurant’s staff generously sent us the recipe and photo of this cookie, which is simply delicious and I couldn’t help but share it with you (if anyone tries it, let me know).

Ingredients:

  • 1kg of wheat flour
  • 800 gr of sugar
  • 100 gr of butter
  • 08 whole eggs
  • 20 g of baking powder
  • 250 gr almonds with skin

Preparation mode:

Put all the ingredients in the mixer, mix with the hook. Add the almonds and mix.

Make layers of dough, brush with eggs on top and bake in a floured pan in a preheated oven at 165ºC for 20 minutes.

Cut the fillets while still hot and bake for another 5 minutes at 170ºC.

Leave to cool and serve with a glass of Vin Santo.
