My mother-in-law’s recipe that my husband kept asking me to make. Very easy! It is delicious to serve in salads or to accompany everyday food.

I believe you can use other vegetables and do it the same way, but I haven’t tested it.


Start by cooking the pods in boiling water for 4 minutes. I used 350g of pods, but you can use as much as you want or as much as fits in the jar.

Remove the pod from the boiling water and rinse with cold or ice water to stop the cooking process. It needs to be a little hard because it will soften when preserved.

At the bottom of a well-cleaned jar, place 4 cloves of unpeeled garlic and add the pods (I cut them in half, but you can put them whole if they fit).

Finally, fill half the glass with apple cider vinegar and the other half with water and 1 teaspoon of salt. I also added a few sprigs of thyme, but it’s optional. Store in the refrigerator. It is ready to be consumed after 3 days.

Observations: I can’t say if you can use other vinegars, I followed my mother-in-law’s recipe and didn’t question it. I can’t say the exact durability, but I believe it will last at least 1 month in the fridge.
