Sweet cakes and pies

Lis’s birthday is in 2 months, but as I’m a first-time mother it took me a while to complete the buffet and there was no date, so the party will be in 1 month, and as it will be close to Easter, that will be the theme. Needless to say, my house was invaded by rabbits, right? And in one of my kitchen experiments I made these cute cookies.

I saw the modeling on a website that went offline, Trainee de Cozinheira. But the recipe I made was the basic one that I like, which is this:

Ingredients:
3 cups of wheat flour
1 cup of sugar
200g butter or margarine for culinary use
1 tablespoon vanilla essence
1 ovo
Milk if necessary
* Standard cup with 240ml

Chop the butter or margarine (still cold) and mix with your fingertips with the flour and sugar to form a coarse crumb. Add the egg and vanilla. Knead well. If it doesn’t work, add milk little by little until it forms a homogeneous dough. Don’t knead, for biscuits the ideal is to just mix, otherwise they won’t stay crispy. Once done, take the dough to the fridge for 1 hour wrapped in cling film.

Modeling:
You need a circle-shaped cutter to make the face. I used the mouth of a small liquor glass. Now make 4 balls of dough. 2 larger and 2 slightly smaller. The larger ones you model the ears as below and the smaller ones will be the cheeks.

I used this candy for the nose and eyes (photo above), but if you don’t have it, you can do it by dyeing a little of the dough or painting the cookie after it’s ready with food grade markers.

Place the cookies in the pan and bake. There is no need to grease the pan, even if it is made of aluminum. The oven must be preheated for 10 minutes at 180ºC. Bake at this temperature as well. The time varies depending on the oven, but keep an eye on how quick it is, in mine it takes 15 minutes. When the tips of the ears start to brown, remove them from the oven.

Yield: approximately 40 cookies
Durability: 45 days in a tightly closed container (only store after they are completely cold).
