Broccoli Omelette with White Cheese

Omelet for me is a more than complete meal. It can be very light depending on the ingredients and you can invent it “exchanges” different recipes! Not to mention that it is a “hand on the wheel” for lazy cooks like the one who writes to you! Add eggs, cheese and something else and the party is ready!


I had some broccoli florets in the fridge left over from the previous lunch (they were sautéed in garlic and olive oil). So I greased a frying pan with a little more oil, chopped the broccoli and heated it up. I added cubes of white cheese, a good handful of parmesan, sprinkled black pepper, added two eggs (large) beaten with a pinch of salt, covered the pan and left it on low heat.

I used the lid of the frying pan to flip it (do you know that trick where you flip the omelette over the lid?) and brown it on both sides. If the pan was bigger and the omelet was thinner, it wouldn’t be necessary. I’m suspicious of praising it because broccoli is my passion, right? Delight!
