This pie is so cute it looks like a piece of cloud! And the best thing is that you can replace the broccoli with any vegetable you want. In addition to not having any dough, which helps when we want a tasty, light and quick recipe to prepare! Look how delicious it is:
Ingredients for a small pie (serves 4):
3 small eggs or 2 very large ones.
4 tablespoons of milk;
2 tablespoons of ricotta cream or cream;
2 tablespoons of olive oil;
3 tablespoons of wheat flour;
2 tablespoons of grated parmesan;
1 tablespoon of baking powder;
1/2 cup of gorgonzola in small pieces;
Salt and pepper to taste.
Way of doing:
Sauté 1/4 of a bunch of broccoli with garlic and olive oil. I used that little broccoli. Set aside and let cool completely.
For the dough, beat the eggs as if you were making an omelet. Then add the milk, ricotta cream, olive oil, wheat flour, parmesan and yeast. Mix well and add salt and pepper according to your taste. You don’t need a blender, you can mix it by hand. It has the consistency of (raw) pancake batter.
Grease a refractory or baking dish with olive oil, spread the sautéed broccoli, small pieces of gorgonzola, pour the dough and bake in a preheated oven at 200º until golden on top! It’s almost a soufflé! That’s a terrible thing!
