Some time ago I wrote a post about cup brigadiers and although it is extremely simple to do, I receive a lot of emails with questions. So I decided to make a more detailed post.
If you’re going to have a party, especially if it’s a child and you’re excited about making different types of sweets in a cup, remember: make 3 times as many brigadeiros, because they’re definitely the favorite and the one that always finishes first!
Some recipes use more cream, but I prefer it this way, so as not to spoil the flavor of the brigadeiro:
1 can of condensed milk
1 level tablespoon of unsalted butter
3 tablespoons of good chocolate powder
Cook over medium/low heat, stirring constantly until it boils and starts to come away from the bottom.
Remove from heat and add 1/2 box of cream.
It can be made 3 days in advance and kept in the refrigerator in piping bags. There are disposable piping bags, but if you don’t want to buy them, use rice or bean bags, they are thicker than normal bags and work very well, but they must be well sanitized, ok?
So it’s like this: just make it, wait for it to cool, put it in the bag and tie it tightly (as in the photo). When ready to use, cut the tip and fill the cups.
One recipe yields 11 cups like the one in the photo (40ml). Confectionery should preferably be added as close to serving time as possible to keep it crunchy. The sprinkles can be added in advance.
