Dark beer is excellent for making sauce. The alcohol evaporates and with the reduction the sauce takes on a beautiful color, not to mention the wonderful sweet flavor. If you’ve never tried it, it’s worth it! How about starting with this practical recipe?
Ingredients:
400g potato balls
3 tablespoons of oil
1 pinch of sugar
1 piece of clean breast (approximately 1.2kg)
Salt and black pepper to taste
4 cloves of garlic
4 bay leaves
1 can of dark beer (350ml)
1 cup (tea) tomato sauce
Cook the potato balls until al dente. Drain and reserve.
Season the breast with salt and pepper. Heat a frying pan with oil over high heat, sprinkle the sugar and brown the meat on all sides. The sugar will caramelize and give it a beautiful color, but don’t worry, it won’t make your dish sweet.
Transfer to a baking dish, add the pre-cooked potato, garlic, bay leaves, beer and sauce and sprinkle with salt and pepper. Cover with aluminum foil and bake in a preheated medium oven for 35 minutes.
Remove, transfer to a platter, pour over the broth that formed in the pan, slice and serve.
