Bean Broth – Panelaterapia

Bean Broth

Sauces and Salads

I think bean soup is just like Brazil! Perfect for game days, and in this colder climate, perfect! The best part is that it’s super easy to make and makes a ton!

I start by preparing the sausage that will accompany it. If you prefer, you can use chopped bacon too. I’m using one of those thin sausages that they sell in packages in supermarkets and are already cooked, but you can use pepperoni, paio, whatever you like best. Just chop it finely and put it in a frying pan. As I use non-stick, you don’t even need to add oil, because it will release and fry in its own fat. Then just remove it from the frying pan and place it on a paper towel to let it dry.

Now pressure cook the black beans with just a bay leaf and water. If you don’t know how to do this step, click here for a post to help you.

Then sauté half a chopped onion and 3 chopped garlic cloves in a little olive oil. Add 2 cups of cooked beans with the broth and a few drops of pepper sauce (optional). Add salt and let it boil for a few minutes. As the idea is to make a broth, it doesn’t need to be very thick, but it depends on each person’s taste.

Now just remove the amount of beans you want and blend them in a blender or mixer. If you think it’s too thick, add a little water when blending.

Put it in mugs or cups (I bought these cute ones in São Paulo, in the Liberdade neighborhood), add some sausages and green onions to add a touch at the end.
