This is one of those side dishes (or main dishes, why not?) that you can make in two minutes. I must say that I always have tomato sauce ready at home. There are sachet versions that are 100% natural, without preservatives (I used Pomarola). Unlike the people who like to do things I think it’s great and it’s a great help when we don’t have homemade sauce on hand. Because the business here is cooking for real people, cooking is possible, right my people?

But back to the recipe: I start by slicing a zucchini and seasoning it with salt, pepper and olive oil. Right away:

1. In a refractory I place a thin layer of sauce, on top of which I place slices of seasoned zucchini (raw) and tomato.

2. Season with a little more salt and pepper (because I don’t season the tomatoes beforehand to avoid releasing too much water) and sprinkle with fresh herbs (I used basil) and oregano.

3. I add a little more sauce (note that there are little “balls” of sauce, you don’t need to spread it on top).

4. Now it’s time for the layer of grated cheese.

5. Repeating the layers with another layer of zucchini, tomatoes and herbs, sauce and more grated cheese. Finally, I add parmesan and bake for about 30 minutes, or until the cheese browns. It releases a little water, it’s normal, but nothing that affects the deliciousness of the dish!
