  • One day before preparing the baião de Dois, soak the beans in water.
  • Then, the next day, cook the beans with the meat broth and 2.5 liters of cold water.
  • Close the pan and let the beans cook over low heat for about an hour.
  • Meanwhile, fry the bacon in a large pan.
  • Then sauté the onion and garlic in the same pan.
  • So, if necessary, remove some of the oil from the bacon and then add the rice and coriander and sauté well.
  • Therefore, add the cooked beans and a little of the broth.
  • Mix everything very well and then close the pan and let the rice cook.
  • Then, when the rice is well cooked, moist and creamy, add the curd cheese on top.
  • Cover the pan again and let the steam melt the cheese.
  • Finally, remove from the heat and you are ready to serve your baião de dos.

Tips for preparing baião de Dois

  • In our recipe we use dried string beans, but you can use black-eyed beans which are also very tasty.
  • Furthermore, in this recipe we made the preparation as simple as possible, but if you want to spice it up even more, you can use chopped dried meat.
  • The ideal is not to overcook the beans, so they don’t fall apart when mixed with the rice. Therefore, it needs to be cooked but firm.
