I hope you had a wonderful New Year’s Eve and that you’re not hungover today! To start the year off in a sweet way, here’s an apricot jam recipe!
Yes, because there is nothing else.”end of year” what an apricot. Whoever has apricots left over because they got carried away at the supermarket, raise your hand! Yeeee!

So let’s reuse! This recipe can be used as a topping or filling for a cake, you can make it with less sugar and eat it as a chutney with baked goods, or as a jelly, which is delicious!

Blend in a blender (I used a mixer): 150g of chopped dried apricots, 100 ml of water, 2/3 cup of sugar (I used organic crystal) and juice of 1 lemon (I used half because it was large).

Blend everything, place in a pan and heat over low heat. I like the jelly to be chunky, so I used the mixer. If you want it smooth, blend it in a blender. Now just let it be found out. Wait for it to boil and keep stirring for about 10 minutes until it reaches the desired consistency. If you want it thinner, add more water and boil a little more.

As it does not contain preservatives, I recommend consuming it within around 4 days. May 2010 be a year of sweetness in all hearts!
