Every now and then I cut down on the carbs around here and cut out the morning and evening bread. On these occasions I eat a lot of tapioca and omelets. This omelet is very simple, but it is very tasty and gives me the feeling of satiety I need.
I’m lucky enough to always have fresh organic and free-range eggs, so I quickly beat 3 of them with a fork. For the omelet to be fluffy, the secret is not to beat it too much. Add 1/2 chopped tomato and 1/3 cup (tea) of grated cheese and 1 tbsp. (soup) of milk (to make it softer). I use whatever cheese I have that day, mozzarella, steppe, parmesan, dish, it can be anything.
The special touch comes from the French Pinch which contains the ingredients: Garlic, Sage, Marjoram, Thyme, Parsley, Bay Leaf, Mustard, Celery, Ginger and Nutmeg. I use a teaspoon. Then just add salt to taste. Mix everything, grease a frying pan with olive oil when it browns, I just fold it in half and it’s ready.
