You already know that baking and confectionery is not my thing. I’ve never made it and I confess that I don’t really want to make a cake like that with 3 fillings, with super elaborate toppings, decorated with a piping tip, etc., etc. The same applies to mini-cakes, or cupcakes. I always go for the simplest!
This one is nothing more than a basic chocolate dough with a ganache in the filling and topping. Top with chocolate balls to add freshness. Something that can be done in half an hour.
Massa (recipe for 6 cupcakes that are larger than a large slice of cake):
– 1 and 1/2 cup of wheat flour;
– 2 eggs;
– 1 heaped tablespoon of butter at room temperature;
– 1/2 cup of milk;
– 1 cup of sugar;
– 3 tablespoons of chocolate powder;
– 1 dessert spoon of baking powder.
Lightly beat the eggs (by hand), add the butter, milk and other sifted ingredients.
Coverage Filling:
-100g of semi-sweet chocolate;
-1/3 of a box of cream.
Place the dough in the molds until there is 1 finger left to reach the edge. Use 2 paper molds for each cupcake to make them firmer. After baking, use a small knife to open a lid on the top of the cupcake and place a tablespoon of the ganache inside and “cover” again. Spread the same ganache and chocolate balls on top. To make the ganache, simply heat the cream in the microwave and add the chopped chocolate inside. Mix until all the chocolate melts
