Nega Maluca Cake

Sweet cakes and pies

I must start this post by saying that this cake is not very sweet and for those who like chocolate with 70% cocoa like me, it is heaven! I made this recipe using cocoa powder which is very strong and has no sugar, so if you like a sweeter cake, you can use chocolate or half and half to balance it out.

Ingredients:
2 cups of sugar (tea)

1 and 1/2 cups of cocoa or chocolate powder

2 cups (tea) of wheat flour

3 eggs

2/3 cup (tea) oil

1 cup of boiling water

1 tablespoon of baking powder

Lightly beat the eggs (by hand), add the oil. Add the dry ingredients, except the yeast, and mix. Add the boiling water and stir well again. Finally add the baking powder.

Bake in a greased and floured pan in a preheated oven at 180º. Mine took about 40 minutes, but do the toothpick test because your oven may be different.

While the cake is baking, prepare the icing by heating: 2 tablespoons of unsalted butter, 8 tablespoons of milk, 1 tablespoon of chocolate or cocoa powder, 6 tablespoons of sugar . Once it boils, mix well and turn off the heat. This topping is not very sweet, so if you prefer, add more sugar to suit your taste.

Remove the cake from the oven, pierce it with a fork and pour in the hot topping. I added sprinkles on top, but it’s optional, okay? This cake is a great reliever for PMS, trust me!
