Banana Cake with Poppy Seeds

Quick cake, great to have with coffee and perfect to serve to guests who arrive unannounced. We hit this one right away with a fork and it doesn’t even make a mess, you know? I adore!!!

Recipe for an English cake pan, if you are making it in a larger pan or with a hole in the middle, double the quantities. Look how easy it is:

Mash 2 small bananas with a fork and add:

2 eggs

1/3 cup of oil

1/2 cup whole wheat flour

1 cup of common wheat flour

1 and 1/2 cup sugar (I used demerara)

1 tablespoon of baking powder

Drops of vanilla essence

3 tablespoons of poppy seeds (I know it’s not easy to find, so it’s optional, you don’t need to replace it with anything).

I put it in a greased and floured pan and baked it in a preheated oven at 200º until I tested it with a toothpick and saw that the cake was baked!

*** Important: I used demerara sugar in the recipe, which doesn’t sweeten as much as refined sugar, so if you’re using refined sugar, reduce the amount.
