Crystallized Banana Candies

Sweet cakes and pies

I saw a recipe similar to this from Ana Maria Braga, but it used flavored gelatin (strawberry, lemon, etc.), so I decided to adapt it and use colorless gelatin because I just wanted the banana flavor. But I wasn’t happy with the “donkey when he runs away” color and I added a few drops of red food coloring. They were delicious. What a breeze to do:

Bring to the fire:
– 6 ripe dwarf bananas, mashed with a fork (I chopped them and had difficulty dissolving them later);
– 1 cup of sugar + 2 heaped tablespoons
– 2 tablespoons of lemon juice;
– 2 tablespoons of colorless gelatin (powder only);
– 6 drops of food coloring in your favorite color (if you don’t use it, it won’t be colored, but it won’t change anything)

Mix everything and keep stirring until it becomes a homogeneous mass. The point is the same as the brigadeiro, when it comes away from the bottom. At the end, if you want to add color, add 4 drops of dye from your reference (I used red).
Grease a baking tray with unsalted butter or margarine and spread the jam. As I only made half the recipe, as I only had 3 bananas, I only used half a small baking dish (it doesn’t make much). Place in the fridge to harden (mine stayed for 6 hours).

Cut into squares (or whatever shape you prefer), roll in crystal sugar (I used regular sugar) and wrap in cellophane paper. I know you will ask about durability. I made them 10 days ago and they’re still great, but I can’t say how long they last because it’s the first time I’ve made them.
You will notice that once they are ready they become very soft and then harden. I like them harder, so for me after 1 week they were perfect.
