Cinnamon and Muscavo Christmas Rosca – Panelaterapia

Cinnamon and Muscavo Christmas Rosca

Sweet cakes and pies

This recipe is nothing more than the famous Cinnamon Rolls which I made in donut form and I thought it was so beautiful and delicious that it deserved to be a Christmas recipe! 🙂

I think I’m a baker guys!!!!

I dug up my bread making machine because after the annual cleaning I did here at home, it was determined that EVERYTHING must be used or must be donated.

If you don’t have a machine, don’t worry, just add the liquid ingredients, then the dry ingredients and press into the muque!!! I use the machine just to knead the dough, then take it out, shape it and bake it in the normal oven.

The recipe below I got from Cinara’s Place, which is a more “old school” blog, like Panelaterapia, and which I trust. I made small changes to the text below, which is from Cinara, to “adapt” to the small changes I made to the recipe.

Massa:

  • 1 cup of warm milk (235ml)
  • 1 large egg
  • 4 tablespoons butter or margarine
  • 1/2 teaspoon of salt
  • 3 1/2 cups all-purpose flour
  • 3 tablespoons of sugar
  • 2 teaspoons of dry yeast

Filling:

  • 1/4 cup melted butter or margarine
  • 1/4 cup sugar (I used brown) mixed with 2 teaspoons of cinnamon powder

Put the ingredients into the machine in the order above. Turn on the “Dough” cycle. When the cycle ends, sprinkle a surface with flour. Take the dough out of the machine and knead for one minute. Let it rest for 15 minutes.

Roll out the dough into a rectangle measuring 35cm by 25cm. Spread the melted butter over it and then the cinnamon sugar. Roll the dough like a roulade, starting from the longest side. Cut the dough into tall rolls. Place the rolls in a greased pan, cover and let rise in a warm place until doubled in size, for 30 to 45 minutes.

Bake in preheated oven for 20 to 25 minutes, until golden.

My observations:

  • I cut it into 9 pieces and placed it in a round pan to give it the shape of a donut.
I brushed egg yolk mixed with a little water before baking.
  • I baked it at 180ºC because my oven is strong and it spent 35 minutes in the oven.
  • I didn’t let it rise after rolling it, I skipped this step hahahaha (I already put it in the oven). But I did this because my machine’s cycle is 1h and 30m and the dough had already risen a lot. If you are going to make it without a machine, I suggest following the original recipe.
  • As soon as it came out of the oven, I mixed 1/2 cup (tea) of icing sugar with a little water and vanilla to make this white frosting. Just mix until it becomes a cream and put it on top.

It was amazing folks! Very tasty, soft, with just the right amount of sugar! I loved it so much!!!
