Before the recipe, let me remind you that today is the book launch day in São Paulo at Livraria Cultura do Conjunto Nacional, I hope you there, huh? From 6:30pm!!! Anyone who has the book can take it, anyone who wants can buy it on site and I will be happy to sign them and get to know you all with lots of selfies and kisses hahahaha!!!
Now the recipe:
One of my favorite things to do with the cupcake maker is cheesecake. In addition to being much easier to make, it is soooo delicious! The texture is perfect!!!

Oh people, this “new” spelling is “pá cabá”, right? “Minicheesecake” written all together is WOW, but if it’s right, then it’s ok, right?
The cupcake machine only has 7 cavities, this recipe makes 16 units, I tried to divide as much as possible.
If you don’t have this machine, there are some cheesecake recipes here on the blog, just search in the search, or you can make this same recipe in pie or cupcake molds, I just can’t tell you the baking time because I haven’t tested it.
For the base, grind 12 biscuits in a food processor (I used a chocolate mabel donut). Add 1 tablespoon of butter or margarine and 1 tablespoon of milk. It will turn into moist crumbs. Reserve.
For the “dough”: from the cheesecake mix (all ingredients must be at room temperature):
- 150g de cream cheese;
- 4 tablespoons of condensed milk;
- 1 small egg;
- 1 teaspoon of vanilla essence.
Assembly: place the paper molds in the machine’s cavities. Add a little of the flour to the base, press with your fingers, cover with the dough until the mold is almost complete. Close the machine and let it bake. When you press your finger into the center of the cheesecake and it is soft but firm, it is ready.
For the topping I used creamy guava paste purchased ready-made. Guys, this is really good!!!!
