gelatin mosaic is revenue of colored gelatine, which for its beauty alone would be worth making, but take advantage of the opportunity and bring the kids to the kitchen because it is super delicious and easy to do!

Recipe from the 80s

If you lived in the psychedelic 80s, you will definitely remember this sweet that was the hallmark of parties after all, everyone loved it and ate it like crazy! Its ease of ingredients and way of making, combined with the color of the decade and a special flavor of white cream, made this sweet “the king of the table” at every meeting and birthday party.

Mine was a bit psychedelic because it was so hot that day, so hot that the colored jellies melted. But that was while I was preparing the cream to pour on top, but in the end it looked so pretty! If you want to see another recipe I made for this sweet, check out this post.

Very Easy but Many Steps

The first step is to prepare the colored jellies of several flavors, I recommend you make just 3 colors (I used lemon, strawberry and passion fruit). I do it this way because if you use 5 flavors you will need a giant pan later. I used zero sugar gelatin because that’s what I had at home but you can use any gelatin.

On the gelatin box, the instructions are for you to mix the powder with 250ml of freshly boiled water and then with another 250ml of cold water, totaling 500ml, right?

Remember that I make each box with 300ml in total, that is, 150 ml of boiling water and 150 ml of cold water, because the gelatin needs to be hard so you can cut it into cubes.

After the 3 gelatins have been made, cold and already hard, it’s time for the cream. I dissolve another pineapple gelatin with just 150ml of boiling water and blend it in a blender with 1 box of cream and half a can of condensed milk.

I leave this cream in the fridge while I cut the colored jelly into cubes and place it in a mold greased with a little soy oil to make it easier to unmold later.

Then just add the cream that was in the fridge and chill until it hardens.

To unmold, heat some water (but be careful, it doesn’t need to boil, just be hot). Place the mosaic shape inside a bowl or large baking dish and leave for about 15 seconds. Then try to unmold it, if it doesn’t work, repeat the operation.

If it doesn’t work, put a little more in hot water until it comes out! Like a Sunday lunch dessert, right?
