I already made a risotto that I called “caipira” and as this one is similar, I decided to call it “roça risotto” because right? I like customizing the names of the dishes lol. I think it looks like country food, mainly due to the simple ingredients and the use of paprika which gives it this beautiful color. Very easy to do folks, silly thing:

Ingredients (for 2 to 4 servings depending on how hungry you are):

  • 400g seasoned pork (or chicken) fillet, cubed
  • 1/2 chopped onion
  • 1 carrot chopped into cubes
  • 1/2 cup fresh peas
  • 1 tablespoon paprika (colorific)
  • 1.5L vegetable broth (industrialized or homemade)
  • 1 cup risotto rice

Whenever I make risotto I leave a mug of broth boiling next to it. If you are going to use industrialized broth, just dissolve 1 tablet and 1/2 in 1/5L of water.

Sauté the onion (I use 1 tablespoon of butter and 2 tablespoons of olive oil) and add the meat. Stir until golden. Add the carrot, pea and paprika. Add the rice and mix well. Add 1 ladle of the broth and over low heat, stir until the liquid almost dries. Repeat this operation until the rice is completely cooked. Adjust the salt if necessary and sprinkle black pepper. When serving, sprinkle some freshly grated parmesan.
